Simple Prep For Outstanding Results
Starting with the best beef also makes prep less complicated. Some simple seasoning is all it takes to accentuate the naturally bold flavor of Certified Piedmontese beef; think salt, freshly-cracked black pepper, and a few fresh herbs. For best results, season the roast at least an hour before cooking to encourage moisture retention, as meats that are salted ahead of time lose less moisture during cooking. Before you pop the roast in the oven, give it a quick sear on all sides to maximize flavor and create a tasty, golden-brown crust. Add canola oil to a large cast iron pan and bring to high heat. Transfer the seasoned roast to the pan and let each side sear for 2 to 3 minutes, or until golden-brown. Some cooks swear by tying the roast with butcher's twine before it goes in the oven; simply wrap and secure the twine width-wise every few inches to encourage even cooking and ensure the roast keeps its shape and retains its juices.
Roasted To Perfection
Once your roast is seared, transfer to a shallow roasting pan, add your favorite veggies, and pop it in the oven for an easy, elegant, and all-around impressive meal. Remove the roast from the oven when a digital thermometer inserted into the thickest portion of the roast hits 125 degrees for a perfectly cooked medium-rare roast (this accounts for carryover cooking which makes the roast's temperature rise another 5 to 10 degrees). Even though CP roasts are best when cooked to medium-rare, some partakers may insist on beef closer to well done. Before cooking, simply slice a small section of the roast that can be cooked to a higher internal temperature to accommodate.
Rest & Carve
After the roast is removed from the oven, it should rest for about half the amount of its cooking time (a 40-minute cook time earns a 20 minute rest). Tent the roast with aluminum foil to help keep it warm during the resting period. With a carving knife, slice across the grain for an optimal eating experience.
