Roasted Garlic: The Ingredient Your Recipes Are Missing

Garlic is a delicious addition to nearly any recipe. But roasted garlic—with its mellower, sweeter, and deeper flavor—takes this humble allium to another culinary level. A few easy steps and some time in the oven render one of the most versatile ingredients. Here’s how it’s done.


Step-By-Step Roasted Garlic

1. Start with a large head of garlic with plump cloves and a dry, papery skin. Avoid garlic that is spongy or has started sprouting green stems. Peel off the easily-shed papery outer layers. This makes the cloves easier to retrieve after cooking.


2. Cut off the top of the garlic head. If the bottom isn’t flat enough for the head to sit upright, slice it to create a flat surface.


3. Transfer the garlic to a shallow pan, and drizzle extra-virgin olive oil over the exposed cloves (using plenty, so the cloves are completely covered). Season with salt and pepper.


4. Cover the dish loosely with aluminum foil and bake at 350˚F for at least 45 minutes, until the cloves are golden-brown and very soft.


5. Let the garlic cool, then slide each clove out of its papery shell.

How To Store

Roast a few heads of garlic at a time so you always have it at your fingertips. To store in the refrigerator, transfer the cloves to a sealable jar or container and cover with oil until the garlic is completely submerged. For the freezer, spread the roasted cloves out on a baking sheet (or mash the cloves and freeze them in teaspoon measurements) and transfer to the freezer. Once solid, transfer the cloves to a sealed plastic bag or container and return to the freezer.

A horseradish & garlic aioli is the perfect topping for burgers and sliders.

· Mash and rub over your favorite steak and roast cuts

· Sauté with your favorite veggies

· Add to homemade salsa

· Mix into softened butter with herbs for a compound butter that’s perfect with CP New York strips and ribeye steaks

· Add to soups for subtle garlic flavor

· Combine with CP tenderloin tips, rosemary, a little cream, Parmesan, and olive oil for a quick pasta sauce

· Add to pizza right before it goes in the oven, or rub a few cloves on the crust

· Mix into mashed potatoes

· Add to creamy dressings, vinaigrettes, or dips
