One Step Up Garlic Roast Beef

What's one step up from your classic roast beef? Garlic Roast Beef!
Roast beef is almost synonymous with “homemade goodness.” Some of you may be daunted to commit to such a large cut of beef, but it’s actually quite simple and versatile! There’s the classic roast beef that needs nothing but butter, salt, pepper, and lots of love, but the possibilities are endless with a good piece of meat, like every Certified Piedmontese roasts!
For those who would like to try something new and exciting but not quite the leap that is restaurant-level fancy, this Garlic Roast Beef recipe takes the basic roast beef just one step further. Use the 7 steps to make the perfect roast and pull out your handy meat thermometer such as MEATER to make the juiciest, perfectly tender medium-rare roast beef brimming with Garlicky Goodness!
4 lb roast, we used Certified Piedmontese Dynasty Eye of Round Roast
5 cloves garlic, cut thinly
2 tbsp dried rosemary
Kosher salt, to taste
Fresh cracked pepper, to taste
If frozen, remove your roast from the freezer at least 24 hours before to thaw overnight in the fridge. Remove your roast 1 from the fridge 1 hour before cooking and set on counter.
Preheat the oven to 475 F.
Pat dry your roast and evenly pierce ½-inch deep holes into the entire roast with a sharp knife.
Insert sliced garlic in each pole, pushing all the way in.
Lightly coat your roast with olive oil and season generously with dried rosemary, salt, and pepper. Rub seasonings into the surface of the roast.
Place the beef in a roasting pan with a rack and put in the oven.
Roast until the internal temperature is between 120 F and 125 F for medium-rare. Remove roast from the oven and let it rest covered with foil for at least 30 minutes.
Slice thin and serve. Enjoy!
