Nick Munger: Bringing Excellence to The Mercato

The Mercato, Certified Piedmontese's new retail location located in Lincoln, Nebraska has gained the talents of Nick Munger to be our Retail Manager!



He credits first starting his career at Avoli Osteria in Omaha. While there, he worked under Chef Benjamin Maides, now of our own Casa Bovina, first as a line cook, then moved up to sous chef. Nick then got an opportunity in Chicago and he made the move there, where he expanded even more on his culinary resume.


Nick first worked at The Publican while in Chicago, known for its eclectic menu of high-end ingredients and award-winning culinary team. Nick developed even more skills and got a world-class experience while at this restaurant. Being a part of this Chicago icon allowed Nick to gain tremendous leadership and food knowledge. While there, the hospitality group that owns The Publican expanded to a new restaurant, Pacific Standard Time and Nick decided to go with.


Pacific Standard Time gained publicity and accolades for its restaurant design and wood-fired menu. Many of the highest names you could find, including many James Beard nominees would be served there. It was featured on Eater (A national food magazine), received James Beard nominations and awards, as well as many features in The Chicago Tribune. Nick got to be a part of all these exciting happenings, first starting in the front of the house, and eventually moving up to sous chef.


It was then that Nick got to learn from Chef Ben Truesdell and gained a deep passion for Wood Fire cooking. With this passion and the experience he achieved in Chicago, Nick was able to learn to pick and choose which quality ingredients to bring in, what is "trending" in the food world, and how to broaden his horizons.



After four years in Chicago, Nick is excited to come back to Nebraska and be a part of The Mercato and Certified Piedmontese! He believes that the Certified Piedmontese brand gives the premium quality and excellence that you can stand behind and that it has a future that can be further built upon. Nick is ready to see The Mercato and the brand grow, as more people learn about our unique breed of heritage-breed Piedmontese cattle raised in Nebraska, and the other local artisan ingredients that he has sourced to be put on the display shelves of in The Mercato.


While not in the kitchen or running The Mercato, Nick spends time with his wife, Morgan, and daughter, Holly. He enjoys spending his free time hunting, fishing, and traveling!


We are so delighted that Nick decided to bring his talents to Certified Piedmontese and The Mercato!
