Make Italian Beef Sausage Pizzas at Home with Dough Made From Scratch

Certified Piedmontese beef pizza is classic, simple, and a true taste of Italy. Certified Piedmontese Chef Ben Maides created this pizza with homemade pizza crust and Italian beef sausage, buffalo mozzarella, cherry tomatoes, fresh basil, and extra virgin olive oil. Be sure to prepare the dough and Italian beef sausage the day before!
Makes 4 dough balls
5 cups bread flour
1 ½ cups water
1 tablespoon grams sea salt
1 teaspoon active dry yeast
2 tablespoons extra virgin olive oil
Start with room temperature water in a bowl and add yeast. Allow it to activate for about 15 to 25 minutes. In a mixer bowl, combine the flour, salt and olive oil. Start mixing on low speed and gradually add the water/yeast mixture. Mix on low speed for 5 minutes. Allow the dough to rest covered for another 5 minutes. Cut into 4 even pieces and work the dough into a ball. Place on a floured baking sheet and cover with plastic wrap. Allow to rest for 3-4 hours at room temp or allow to rise for about 30 minutes. Refrigerate covered overnight. If doing a slow proof overnight allow the dough to come to room temp for 45 minutes until rolling into pizza.
Italian Beef Sausage
1 pound of 80% lean Certified Piedmontese grass fed ground beef (can substitute 85% or 96%)
2 cloves garlic, minced
1 tablespoon fennel seed
1 teaspoon fresh oregano, chopped
1 teaspoon fresh basil, chopped
1 tablespoon kosher salt
1 teaspoon fresh cracked black pepper
In a mixing bowl combine all ingredients and thoroughly massage the seasonings into the ground beef and set aside. It’s best to let the sausage absorb all the seasonings for a few hours or overnight.
