How to Make The Perfect Burger
Learn how to make the perfect burger AND Chef Ben Maides secret burger sauce!
For the burger:
1 pound Certified Piedmontese grass fed or 85/15 ground beef
4 brioche buns
8 slices gouda or your favorite cheese
Kosher salt and black pepper
For the sauce:
¼ cup kewpie mayo
2 tablespoons minced pickles
2 tablespoons minced onion
1 tablespoon hot sauce
¼ cup ketchup
Split ground beef into 8 even portions and season with salt and pepper. Flatten out saran wrap, add beef and start with the shape you want. Press down until patty is desired size and thickness.
For the burger sauce, add kewpie mayo, minced pickles, minced onion, hot sauce and ketchup to a bowl and mix. Set aside.
Sear patties and toast the buns for 1 minute on each side then top with cheese. Stack two patties on the toasted bun and top with a generous amount of burger sauce.
