1 (48-ounce) Certified Piedmontese chuck roast

2 sweet onions, quartered

4 medium carrots, peeled and cut into 2- to 3-inch pieces

3 celery stalks, cut into 2- to 3- inch pieces

6 ounces mushrooms, whole or in large clusters

4 quarts chicken stock

Kosher salt and fresh cracked black pepper, to taste
